More Pantry Progress

It's been a while since I've reported on The Pantry Experiment, so here's an update.

February saw only small improvements in the size of the pantry stash. Being away from home for over half the month (Charleston, cruise, DC) did little to help us deplete the supply, although we sure ate some yummy food while we were gone! I do remember making raspberry buckwheat pancakes with maple syrup and bacon for Valentine's Day, and Eggs Benedict (complete with Hollandaise sauce) one Saturday morning. I also fixed a lot of pasta--spinach and feta/sun-dried tomato raviolis with heirloom tomato sauces, roasted red peppers and freshly-grated Parmigiana-reggiano, baked white cheddar macaroni & cheese, and a bunch of other stuff to make use of tomatoes, olives and cheeses. I also remember making a giant batch of chili and jalapeno-cheddar cornbread.

I did have to buy a few staples along the way. Here's the grocery list breakdown:

I caved in this last time and bought some fresh produce because I needed a break from canned beans, squash and okra. Currently, there are catfish filets, applewood-smoked chicken sausage links and bacon thawing in the fridge. I think I'll fix a chicken pie Thursday night.

To-date, that makes $100.25 that we've spent on groceries this year, minus Valentine's candy, alcohol and snacks that we've purchased to donate to various events. Not bad.

Excellent! You're doing much better than I am. It will be nice when Ronette gets all foods back on this funky elimnination diet. She just got beans back last week. Although, I admit to a little cheating the system because I donated three bags worth of stuff out of the pantry for a Boy Scout can drive on Saturday. And your list reminds me that I need to go buy eggs.
