Pantry Progress

Pantry progress is slow but steady. (I feel like I'm giving a traffic report.) We've been haphazardly depleting some items from the fridge--I've had either some yogurt or a tangelo for breakfast the past few mornings and I observed some empty bottles of sparkling cider in the recycling bin earlier this week. Today for lunch, I cooked a two-year old (vacuum-sealed) package of potato gnocchi and tossed it with some olive oil, cracked pepper, Harry & David Sun-Dried Tomato Pesto and freshly-grated Parmigiano-Reggiano. Delish, and all stuff we had on hand.

I've shifted to doing most of my cooking at lunchtime recently--between church activities, community obligations and dining out with friends we find ourselves eating supper away from home 5-6 nights a week. Fortunately, drmellow's office is close by, so a trip home for lunch only takes an extra 5 minutes. We've developed a nice little routine of eating together, then catching up with shows on the DVR.

Sometimes drmellow opts to watch Jerry Springer, in which case I usually groan and find somthing else to do!

I am making a list of what's in the pantry so that i can be better about using what's here rather than buy, buy, buy. This is very important given that I just found 4 unopened bags of walnuts.

Walnuts! Now there's something I don't seem to be hoarding in excess. I have one canister full on the countertop, a recent product of holiday baking. What will you do with 4 bags of walnuts?

(Oh, and that gnocchi I made yesterday? We brought that with us from the other house. I wonder how much other stuff in the pantry moved with us. It's kind of scary.)

Got any suggestions for walnuts? Other than making banana bread with walnuts, brownies with walnuts and broccolli salad I've still got three bags left. (maybe 2 1/2).

I realized the other day that I needed to toss some things that were moved before I got a chance to go through them. I tossed a garbage bag of stuff that was bought so long ago that I decided trash was better than trying to eat it.

Hmm. While recently assessing the remains of my pre-Christmas nut-buying binge (apparently I thought I'd be be making dozens of cookies), I decided the way to use up all of my pecans was to make Spiced Candied Pecans. I guess it's possible that the recipe could be altered to accommodate walnuts, but does anybody really eat candied walnuts? That's probably not much help.

Of course, the first thing that comes to mind when I think of walnuts is walnut-chocolate chip cookies. Because those are my favorite. So favorite, in fact, that I forego the patience involved in making them and buy them straight from the refrigerator section of my grocery store.

The other problem is that Ronette starts a weight loss program next week and I do believe walnuts will be on a limited and measured down to the gram list.
